Proof Pudding was founded in 2025 by two UC Davis scientists who believe that food is medicine. Founded by Dr. Kasey Schalich (CSO) and Jade Schoenfeld (CPO), Proof is low in sugar, high in protein and fiber, and provides brain and gut health support.

Our better-for-you pudding only includes clean ingredients you can trust, forgoing unnecessary additives, artificial flavors, and colorings.

Meet the Team


  • Co-Founder, Chief Scientific Officer (CSO)

    Dr. Kasey Schalich is a scientist and entrepreneur with a Ph.D. from Cornell University. She received postdoctoral training at Vanderbilt University Medical Center and UC Davis in gastroenterology, nutrition, the gut-brain axis, and dairy functional ingredients. With over a decade of research and leadership experience across academic, food and agriculture industry, and venture capital sectors, Kasey brings deep expertise in translating cutting-edge science into functional food innovation. Kasey is driven by a strong commitment to the Food is Medicine philosophy. Awarded the 2025 Global Prebiotic Association Young Researcher Award for Fundamental/Primary Research, her passion is understanding how bioactive food components can promote brain and gut health across the lifespan. As co-founder of Proof Pudding, she combines scientific innovation with a clear vision for food-is-medicine to build a product people can trust- and love to eat.


  • Co-Founder, Chief Product Officer (CPO)

    Jade Schoenfeld is a food scientist and entrepreneur currently earning her degree in Food Science at UC Davis. With a background in food product development, quality assurance, and community-based nutrition, she brings a well-rounded perspective to functional food innovation. Jade has worked across academic and industry settings, gaining hands-on experience in sensory evaluation and regulatory compliance. Jade brings a deep understanding of how to create nutritious, clean-ingredient products that don’t compromise on taste. She is passionate about designing nutritious, functional foods that support cognitive and physical health across all life stages. Her work reflects a deep commitment to creating better-for-you foods that prioritize both health and taste.
